Although it is similar to beef, elk meat needs to be handled and cooked differently. You will find that you can interchange elk meat with all of your favorite beef recipes, if you follow a few basic instructions.......
"Slow and Low"
You will find that if you leave a lot or alittle pink in the meat you will have a better taste. We recommend rare to medium, and make no promises for well-done steaks or roasts. Remember it is a lean meat, and we recommend a temperature no greater than 250-275 degrees. If you cook it WELL DONE you will loose all flavoring and it will be tough.
